Ingredients: Serves 4

  • 4 Quaker Butter Popped Corn Rice Cakes
  • 1 medium-sized tomato, thinly sliced
  • 1⁄2 c 1% low-fat cottage cheese
  • 2 T shredded carrot
  • 1 1⁄2 t chopped chives or green onions
  • 1⁄4 t dried basil
  • paprika (optional)

Instructions

  • Place 2 or 3 slices of tomato on each Butter Popped Corn Rice Cake
  • Combine cottage cheese, carrot, chives and basil and mix lightly
  • Top tomato slices with cottage cheese mixture.
  • Garnish with paprika, if desired.
