- 2 Quaker Salt Free or Lightly Salted Rice Cakes
- 2 oz cooked shredded chicken
- 1 T barbecue sauce
- 1 t red onion, thinly sliced
- 1 T low fat shredded sharp cheddar cheese
- 1 t chopped cilantro

Instructions
- Combine chicken, barbecue sauce and red onion in small microwave-safe bowl; mix well. Microwave on HIGH (100% power) for 30 seconds, or until heated through.
- Divide mixture evenly between Lightly Salted Rice Cakes.
- Sprinkle with cheese and cilantro.
