BBQ Chicken Snacks

  • 2 Quaker Salt Free or Lightly Salted Rice Cakes
  • 2 oz cooked shredded chicken
  • 1 T barbecue sauce
  • 1 t red onion, thinly sliced
  • 1 T low fat shredded sharp cheddar cheese
  • 1 t chopped cilantro

Instructions

  • Combine chicken, barbecue sauce and red onion in small microwave-safe bowl; mix well. Microwave on HIGH (100% power) for 30 seconds, or until heated through.
  • Divide mixture evenly between Lightly Salted Rice Cakes.
  • Sprinkle with cheese and cilantro.
