Artichoke Hummus

Ingredients: Serves 5

  • Quaker Ranch Quakes
  • 1 cn (15 oz.) chickpeas (garbanzo beans), drained
  • 1 clv garlic
  • 1⁄2 c drained marinated artichoke hearts
  • 2 tbsp water
  • 1 tbsp chopped parsley

Serving size:  10 Quakes + 2 tablespoons hummus

Instructions

  • Combine all ingredients except parsley and Quaker® Rice Snacks in work bowl of food processor. Pulse until smooth.
  • Transfer to serving bowl. Cover and refrigerate until ready to serve.
  • Stir in parsley. Dip or spread each Quakes Ranch Flavor Rice Snack with hummus.
  • If desired, one (8 oz.) container refrigerated ready-to-serve hummus may be substituted for chickpeas. Proceed as recipe directs using 1 tablespoon lemon juice and omitting water. If hummus is too thick, add water, a teaspoon at a time, until desired consistency.
