Ingredients: Serves 1

  • 10 Quaker Ranch Quakes
  • 2 T Reduced-Fat Cream Cheese
  • 2 t Reduced-Fat Mayonnaise
  • 4 T Veggies, chopped finely (i.e. seeded tomato, broccolli florets, cauliflower, carrots, spring onion)

Instructions

Chop all veggies together using food processor.  Combine cream cheese and mayonnaise.  Spread evenly among rice cakes.  Top each rice cake with about a teaspoon of the chopped veggies.  Enjoy!
