Delightful Chicken Salad

Ingredients: Serves 2

  • 2 Quaker Butter Popped Corn Rice Cakes
  • 1⁄2 c cooked, diced chicken breast
  • 2 T fat free mayonnaise
  • 1 T chopped celery
  • 3 red grapes, sliced in thirds
  • 2 lettuce halves
  • 1 t slivered almonds, toasted

Serving size: 1 rice cake with toppings

Instructions

In small mixing bowl combine chicken and mayonnaise. Add grapes and celery; stir to combine. Line each rice cake with lettuce leaf. Evenly divide mixture in half and spread over rice cakes. Sprinkle toasted almonds over both rice cakes.
*Note: For Curry Chicken Salad, stir ΒΌ tsp curry powder in with mayonnaise.
